Since Fall has rrived and its starting to get cooler I thought I'd start a thread where we can share our favorite soups and recipes.

A few of my favorite soups are:
French Onion Soup
Stuffed Pepper Soup
Cabbage Roll Soup
Vegetable soup(only the way my gram makes it)
and while not quite a soup Beef Stew i one of my favorites

I will need to lok up a few of the recipes to post soon.

Also ifanyone has any good broccoli Cheddar or Potato Cheddar oup recipes I would greatly appreciate some ideas
 
Who doesn't love a good french onion soup yummy. The other half makes it around here but NOT often enough

I've made veggie soup twice in the pressure cooker this past week. No particular recipe, I just wing it. When it's finished cooking in the pc I take my handblender and whiz it to a thicker consistency

I could probably live on soup
 
Vegatable soup

Potato soup

Chicken. sausage and okra gumbo

Chicken noodle soup

Beef stew

French Onion

Baked Potato Soup

Cheese and Vegatable soup with a dash of curry powder

 

Like petek could live off soup in the fall and winter.
 
I have my Grandmas recipe (more like directions) for potato soup (or broccoli, asparagus, etc)
Start by cubing up as many potatoes as you like (peeled or unpeeled) and any vegetables you want to add (carrot, celery, onion) then add enough water to your soup pot to just cover them (add plenty of salt and pepper). Bring to a boil and cook for about 5 minutes, then add whole milk to fill about 2/3 of the pan. Add meat of your choice (ham or bacon is good for potato soup). Next, add a serving spoon of margarine and a can of evaporated milk, (not sweetened condensed milk) and add plenty of salt and pepper again. Cook until the potatoes are soft and the flavors have combined, you will need to check the salt and pepper again. If you want to thicken the soup, now is the time to do it, I use a mixture of milk and flour or cornstarch (it does stick very easily after its thickened, be careful) If you want to add cheese, do that right before serving, and check the seasoning again. This recipe is good for making large batches and tastes delicious even though it is simple. You will be shocked at the amount of salt and pepper you need, the potatoes absorb the flavor.
 
Here is my easy Vegetable Beef Soup:

 

Place a beef soup bone in the bottom of a slow cooker.

 

Add 1/2  to 1Lb. of any type of beef cubed.

 

Add one bag of frozen mixed vegetables

 

Add one medium potato cubed

 

Add frozen pearl onions -- 1/2 bag is plenty

 

Add 2/3 qt. canned tomatoes, or 1 large can

 

Toss in a moderate handful of Barley, salt and pepper and dried or fresh basil stir the top levels leaving the bone and beef on the bottom.  Cook on Low for 6 hours.  Serve with a good crusty bread and a tossed salad for a hearty winter meal.  Add a glass of red wine too if you are so inclined...
