I have an early-mid 60's GE Toast-R-Oven(the generation previous to the picture). The machine has worked fine for years, but lately, toast that came out "correctly" at the 3 setting now requires 5 or 6.

Has the thermostat changed with age? Can it be adjusted? Could it be some other fault?

Yes, although I rarely toast single slices, when I do, the bread is over the thermostat, per instructions.)

I don't know if this is a factor in your toaster-oven's situation, but have you tried gently cleaning and polishing the sensor? Buildup on it could affect the performance. You will want to support it securely while cleaning it.
