As much as I like to make difficult complicated recipes, When I am tired and not in the mood to cook, something like this fits the bill!!!
Cherry Fluff Pie
1 stick butter
1 1/2 cups graham cracker crumbs
1-8oz pkg cream cheese softened
1/2 cup powdered sugar
1 med sized carton Cool Whip
1 can Cherry Pie Filling
Make crust by melting 1 stick butter in a 9 inch pie plate, Add crumbs, mix and press up sides and on bottom to make a crust.Chill well,.I use a 1 cup Stainless measuring cup to pack it well...Or you can use a bought shell...
Cream sugar and cream cheese well, fold in Cool Whip, don't beat, Add this to chilled crust, bringing the mixture up the sides of the crust, add pie filling to the top, Don't spread all the way to the edges, you want about a inch or so of the fluffy filling showing, Chill and serve...A note, When I was a child I thought cool Whip was a real treat,My Grandmother allowed ONLY real whip cream to be used, Mother used Dream Whip for a few things...But NEVER Cool Whip...LOL

I make a pie very similar to yours, but use 1/2 pt whipping cream in place of the Cool Whip, and whip the cream cheese with it until stiff and add a splash of vanilla. I use a regular baked pie shell, but I know I would like the graham cracker crust too, it's one of my favorite things. I've also used Blueberry pie filling sometimes in place of the Cherry. Your right too, this is a very easy pie, light and everybody likes how it tastes. I'll try your version next time I make it.

I originally got this recipe from a women I used to work with at my first FT job when I was 19. Cheryl used the graham cracker crust for hers too. Before I retired I used to bring this to potlucks at work all the time because it was so quick to make after work for the next day.
