A lady at the retirement community where I work gave me this recipe, and it is a winner!
Mrs Cochrans Pumpkin Pie.
3 large eggs
1 3/4 cups pumpkin
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
3 cups softened vanilla ice cream
Mix eggs,pumpkin, sugar,salt ,and spice, add softened ice cream, stir until smooth
divide into 2 pie shells, 425 for 15 minutes,reduce heat to,. 350 for 30 to 45 more minutes, She said sometimes she used Butter Pecan ice cream for a little different pie, This one makes a beautiful rich pie.

I have never seen a recipe that calls for ice cream in the batter! This is so interesting to me - I will have to try it. I guess the ice cream replaces the evaporated milk, and I can see how it would add even more richness.
