In the US we’d call them cookies, but this recipe is for a traditional biscuit of Australia and New Zealand. ANZAC stands four Australian and New Zealand Army Corp and this recipe was popular during wartime as the cookies are sturdy and traveled well without breaking.

A very simple recipe, but oh so good!

This is the recipie I use. Normally here they’d be cooked till they’re more of a dark golden brown.

When I make them here, the syrup and butter foams like crazy when you add the bicarb and boiling water. It foams up like honeycomb.

The important question is whether yours are chewy or crunchy. That’s the biggest battle line over how Aussies like these. Once they cool, they generally go rock hard, which is why they worked in the war, the travelled well and didn’t break up when they were bounced around.
