Don`t get me wrong guys, I`m all for good rinsing results, always have been.
Got my Miele programmed to maximum rinse levels and always use (unless it`s a very small load) Water Plus which is programmed to an additional rinse. We have plenty of rainfall in Germany, so it doesn`t make much sense to sacrifice well rinsed clothes.
The problem is if I dose the detergent properly (for my needs) I still get plenty of suds in the last (3rd) rinse.
Years ago when I still had a mechanical timer I would simply add a rinse when I felt it was necessary. When I got my first PCB controlled machine I simply gave in and let the fabric softener (in the last rinse of course) take care of the suds.
Never had any skin issues because of that.

When my Miele was new it also gave me problems by accerlerating too quickly then it often went into suds or water locks but it DID NOT always slow down as it should to clear the pump and then accelerate slowly again. It sometimes just ignored suds locks and kept on spinning.
Not sure if you experience exactly the same problem, but if you do the remedy is to raise both front legs by at least 2 cm. A Miele repairman adviced me to do so after countless service calls. It still accelerates very quickly with smallish loads but now it is much more reliable at detecting problems and taking the right action.
