I am having a cook out for the 4th and wanted something simple with little prep and requiring little attention on the grill so I decided on beer can chicken. Does any one have any favorite recipes for this they can share? Does they type of beer make a difference?

Beer Can Chicken

I have done it, and it turns out delicious. Do not waste your money on a expensive beer, as you will not be able to taste the difference. I suggest buying a 6 pack, using one on the chicken, and drinking the other 5 for appetitzers. If by chance the chicken does not taste good, you will have a buzz on, and you will not care anyway. LOL

Been doing it for years.  Every store has a rack of some kind to accomplish the task.  I use beer, or water, or whatever I have on hand.  I add Mrs, Dash to the liquid and the chicken, and some Worcester  sauce to the mix, set the chicken on the can/rack/whatever, put a small potato on top to seal up the neck opening.  I cook it on very high temp for 5 minutes or so to sear the skin, then reduce the heat and it's moist and tend in a little over an hour.

I always salt and season the chicken overnight after a good soak in the sink.  Usually a couple of hours in cold water works well for me.

About the can....

Cook's Illustrated/America's Test Kitchen answered the can enamel question some years ago, and their research said that the liquid kept the can cool enough so that no chemicals from the can went into the chicken. Just me, but I would wash the can with dish liquid and water, rinse well, and dry with a cloth before proceeding.

Norpro brand makes a vertical roaster that ATK likes. One pours the beer or other liquid into the center of the roaster. I got the store brand roaster from Sur La Table.

If you're having me over, or someone else who does not drink alcoholic beverages, canned lemonade will also work. Water does nothing, nothing for the flavor of the chicken, so beer or lemonade is the ticket.

You can also brine your chicken before cooking. See the separate thread on this.

I usually just put some Tarragon, Sage and Salt & Pepper inside the chicken before cooking and slightly oil the outside of the chicken with olive oil. It seems to help the outside crispen up/

My cousin gave me a ceramic vertical roaster for my birthday and I'm thinking that these recipes will work well with that... Getting hungry now.

Tony- I've also heard you can wrap the can in aluminum foil before inserting it into the chicken. No matter what the tests showed, I'd probably wrap it if I were to try it.

Lawrence- lemonade? Sounds very interesting! Now you've got me thinking- I wonder how Orange Crush or ginger ale would do?

Wouldn't scraping or scrubbing off the paint create more residue and a more porous surface to leach into the food?
