Here's a super fast (and easy) recipie for blueberry cornbread. It's good served warm with butter on it and hot tea to enjoy while you sit down relax and watch a movie before going to bed. It's also good for a quick breakfast or snack.

3/4 cup of yellow corn meal

1 1/4 cup of flour

1/3 cup of sugar

2 teaspoons baking powder

1/2 to 3/4 teaspoon of sea salt

1 cup of almond milk

1 egg

1/4 cup of bacon grease or butter (if bacon is particulary salty, reduce or eliminate the above added salt)

11 ounce package of blueberries (washed)

Mix dry ingredients then add the egg beaten, then add moist ingredients and stir until well mixed. Fold in blueberries and put in a greased 8 x 8 pan and bake in an oven preheated to 400 degrees until top is gold brown and blueberries burst and bubble (about 20 to 25 minutes)

Wow, it's moist and delicious! I used whole milk (instead of almond milk), butter (no bacon grease on hand), and 2 cups of fresh blueberries. Next time I'll use buttermilk. Had an unopened carton of it on hand, but the jug of whole milk in the fridge needed to get used up.

This recipe is definitely a keeper. Thanks for sharing it, Barry.

I don't know if we have many true deep southerners on this sight, despite living in TN I am an import from Ohio. . But I sometimes get a bristle from one of the true southerners when I mention I put sugar in corn bread. I experimented and found 1/3 c of sugar gave what I consider the best balance.

From what I heard a true southern would rather die than put sugar in cornbread. That seems funny coming from the people who have killer sweet tea that has so much sugar in it you could make ethanol out of it and gas up your car. I just assume drink a cup of maple syrup myself. lol

The also put sweet pickles on things, like hamburgers down here, where in the north we use use dill pickles. But overall, I will have to say here in the south they know food!!! (and my increasing girth shows it)

So for you true southerns I apologize for this sweeter version of cornbread. :)
 
new tip

Someone just gave me a tip, he said you can put cornbread mix into your waffle iron and bake it that way.

 

So I tried it with my blueberry cb recipie and it worked.  I didn't take a picture because I had the waffle iron a little to hot and they scorched a bit.  Next time I'll turn it down and they should come out perfectly.  By they way I put maple syrup (and butter) on it like a real waffle, and it was delicious.

 

If you leave the blueberries out, you can use this recipie for corndogs.  Just stick your weiner in the batter before you put it in the deep fryer.
