A friend of mine from England used to make this for us and so I thought I'd give it a go.

 

Ingredients:

Leftover mash or 4-5 med./lg. potatoes

4-5 Strips of streaky bacon (I prefer thick cut)

One medium onion, diced

A quarter head of cabbage, diced

Other leftover veg and be used also.

 

Instructions:

Add leftover mash or peal and quarter potatoes and cook in boiling water about 10 min. or just until soft, add to bowl and mash. Add salt and pepper. I don't measure. Several shakes or turns from the mill.

While the potatoes are cooking, fry the bacon until it's crispy brown, then crumble or chop. Saute onion in bacon grease and add to bowl along with bacon. Boil the chopped cabbage 7 or 8 min. just until tender, strain and add to bowl.

Wow, haven't had bubble and squeak since I was a tyke!

My dad, who was from Wolverhampton, made it whenever he wanted comfort food. He would heat a few tablespoons of oil in a frying pan, then dump in the mixture and fry it like a huge cake of hash browns. He'd put a large plate over the frying pan, flip the whole works over, then slide the bubble 'n' squeak back into the pan to brown the other side. I always found that a very impressive display of kitchen prowess for some reason, LOL.
 
Mix up all the ingredients and return to frying pan that bacon came out of and mash down flat and let cook over med-high heat in bacon grease until it "bubbles and squeaks". If there's not enough bacon grease for the amount that's being cooked, add a little soft butter while cooking. Look for browning around the edge. Use spatula to cut into quarters or eights and try to flip over. It usually comes apart but that's OK. Keep turning until it's all turned over and mash down again with spatula. Keep turning and mashing until properly browned. Cut out a piece and serve on a plate with cold tea no ice. Nice English supper.

Sorry, Brian! I didn't mean to jump in before you were finished with your posts. Your bubble and squeak looks very good...and I have potatoes and cabbage in the house. Supper it is!

Thanks for bringing back fond memories of my dad and foods from back in the day.
 
Bubble and Squeak

Nothing wrong with Brian's recipe in principle, but bubble and squeak is primarily a means of using left overs and is very popular for boxing day fare. The bacon will add considerably to the flavour, but you can also add carrot, parsnip and of course post Christmas, chopped up Brussels Sprouts
