The "Orange Glow Chiffon Cake from Rose Levy Beranbaun's "The Cake Bible" is one of the finest cakes I have made or tasted. It even looks refreshing, all moist and billowy and perfumed with orange zest... it is a wonder......
 
Baking Parchment

Decided to make a cake tonight and found I was out of baking parchment paper. So I carefully greased and floured my pans. Guess what?

The d*#@ned thing stuck in the f*%#ing pan anyway, so now my cake looks like S*$t.

What a waste of time! If you think I'm using foul language now, you should have been here! All that humbug for nothing. GRRRRRR

I wanted this cake to be special for the 4th. Oh well. I will try again for Dennis' birthday on the 8th.
 
Cocowhat?!?

Fresh frozen coconut if found in many ethnic and Asian grocery stores. It is very popular in mainstrea, grocery stores in the South. Sweetened Coconut syrup used for making Pina Coladas is the type you want to use.

I you are out of parchment, use waxed paper, buttered foil or brown grocery sack that has been weel greased.

Here is my cake failure...

Even all this frosting could not patch the huge San Andreas fault running through this one!

Dennis is out doing our pizza gig and I wanted to surprise him with a beautiful cake when he got home. Oh well.

Its a fudge cake that i make with Bakers unsweetened chocolate. The frosting is also made with Bakers chocolate.

Anyone wanna come over and help me eat my mistake?

Well now you know the secret to my midriff bulge. It looks great. A moist crack is bettere than a dry hump any time!

I got that Sunbeam NIB at the Rainbow Attic in Kihei for only $20-it's not the Kitchenaid in Wasabi green that I really want, but it will do. I really don't have the room for a bitchen-aid anyway. I'm glad to have a mixer to play with because you cannot do laundry ALL the time.

I'm sure the cake will taste OK. I really prefer to use cake flour (Softasilk) but didn't have any of that either.

Oh, gotta go-Daddy's home! Bye!

Softasilk

When your out of cake flour, use 3/4 cup all purpose flour plus 2 T cornstarch and sift well.

Coconut Heaven

Coconut Chiffon Cake

In a large bowl combine
2c cake flour
1c sugar
1T baking powder
1t salt
1/2 oil
7 egg yolks
3/4c water
1t vanilla
1t almond extract
mix on medium speed for 2 minutes. Fold in:
1c coconut.
Set batter aside aside.

In a clean bowl whith clean beaters, whip
7 egg whites
whip until foamy and then gradually beat in 1/2 cup sugar. Whip until stiff.
Fold carefully into cake batter and pour into an UNGREASED tube pan.

Bake at 325 for 1 hour.

Invert pan over bottle neck to cool.

Frosting

1c butter
1 1/2c powdered sugar
1/4c evaporated milk
1t vanilla

Combine and then whip on high speed for 5 minutes.

Black Forest Chiffon

Chocolate Chiffon Cake

In a small bowl, combine
1/2c cocoa
3/4c boiling water
Mix well and set aside to cool

In a large bowl combine
13/4c cake flour
1c sugar
1 1/2t soda
1/2t salt
7 egg yolks
2t vanilla
COOLED cocoa mixture
Mix on medium speed for 2 minutes. Set batter aside.

In a clean bowl with clean beaters, whip until foamy
7 egg whites
1/2t cream of tartar

Gradually beat in:
3/4 cup sugar
whip until thickened and glossy.

Fold whites into chocolate batter and pour into ungreased tube pan. Bake at 350 for 55 minutes. Invert to cool.

Split cake into three layers and fill with prepared cherry pie filling.

Frost whip sweetened whipped cream (3c unwhipped) and chill until serving time.

The recipe should read, 1/2c oil in the Coconut Chiffon recipe.

Thank you Thor for your proof reading abilility. I simply choose to read, what I want to see. I am constantly amazed to read my posts at a later date and see all the errors.
