He put in 3 Tablespoons of sugar and about 2 Tablespoons of honey in 1.25 cups of flour !!! Not to mention any syrup you pour over them. It's a diabetic nightmare. It does make me wonder if he meant teaspoons and not tablespoons.
 
Cowboy Cake Recipe

For what it's worth if anyone is interested.  The term "cake" is a bit of a stretch.  I made it once a long time ago but after a friend mentioned wanting to bake something for a granddaughter who is allergic to eggs, I was able to locate my clipping of the recipe so texted it to her.  I like the flavor of the spices, but as the bakers here might imagine, the "cake" is pretty dense.

Ralph, I wondered what you were talking about. Thought maybe it just wasn't showing up on my phone. The cake recipe you posted sounds like one my neighbor Marilynn has made several times. It was good.

As for the pancakes Kent made, I've not made them, and can't until I get my range or cooktop hooked up; everything in microwave for now. I'm not a big pancake person, but his finish product looked good, as do many of his other recipes.

Personally, I didn’t find the amount of sugar in the pancake recipe excessive, but the honey did seem like a little over kill. I love pancakes but I seldom eat them because I know that for me I have to have lots of butter and syrup and they are way too many calories for a regular breakfast menu item. So maybe 2-3 times a year I’ll treat myself and cut out something else that day to compensate for the extra calorie load from breakfast.

As far a diabetic nightmare, if you have diabetes you probably shouldn’t be having pancakes in the first place for breakfast or any other meal. I suppose you could make them with a tsp of sugar and top them with fresh berries with no sugar and no butter.

I’d call that a why bother pancake breakfast. If I can’t have em the way I want em, then I’ll have something else instead.

I watch Kent Rollins all the time and I even occasionally build a "campfire" in the back yard to cook with my Dutch ovens. Most of the time I do Dutch oven stuff inside in my regular oven.

At this point I mainly cook on cast iron. I have a few carbon steel skillets and woks plus some stainless stock pots. Otherwise its CI.
 
I gave my electric fry pan to the church sale a few years ago, as I just didn't like it. I think I have an electric griddle packed up, but don't know if it's here or at storage. I plan to bring my stuff back from the storage place soon, so may find it, along with my mixer.
