Pan-fried pork tenderloin medallions with roasted brussels sprouts and some sliced tomatoes and radish. We're going for lower cal meals these days. However, tonight we'll cheat a little with unlimited salad (maybe 1/2 a breadstick) and fried calamari at Olive Garden!

Hi Keith,

The pork was drizzled with lime juice then a little pepper, granulated garlic, and italian seasoning.

The sprouts were blanched for a minute then well-drained. The ends were trimmed and they were cut into halves or quarters, depending on the size. A gentle toss with extra virgin olive oil, a little salt, pepper and granulated garlic, then in a hot oven for about 15 minutes, cut side down. When they're browned on the bottom, flip 'em and shut the oven off while you finish prepping whatever else you're having.

Cuffs- never tried the roasted broccoli! And we love asparagus roasted on the grill!

Sometime try sweet potato, onion, red bell pepper and mushroom (or whatever else you have) and throw some grape tomatoes in 2/3 of the way through!

This was last night... salmon (lime juice, gran garlic, pepper), sauteed greens (spinach and baby chards) with baby bella mushrooms, and tomato, cuke, radish salad. After pan frying the salmon, deglaze the pan with a little OJ and white wine for a quick pan sauce.

Iove roasted Brussels sprouts, but I've not tried making them at home.

I often roast a medley of asparagus, broccoli, onions, and carrots(the big ones not the flavorless baby ones). I toss with olive oil, sea salt, and minced garlic
