What did yo have.

 

Fixed roasted veggie and a small bacon wrapped filet. 

 

Dinner ws for 2 of us but made more vigges to keep.

 

2 large potatos cut in chunks

1 medium sweet potato cut up in chunks

1 large onion cut in thirds

1 bell peper cut in chunks

2 stalks celert cut about 1"

2 carronts cut the same as celery

1 small head brocolli in small heads

 

I drizzled olive oil over them in a bowl and also fubb the foil wrapped baking sheet with olive oil

 

A small sprinkle of salt and pepper and about a teaspoon of Mrs. Dash original

 

Had oven at 375 and roasted for about 20 minutes and stired then another 20.

 

Used George Forman grill to cook to Medium rare the steaks about 3 minutes on side then turn over to get frill makrd another 2 and let sit 5 minute for juices to reabsord.

 

Good meal.  Have enought raw veggies to use in another meal.

 

Tormorrow will have cheese and onion enchiladas with spanish rice and sliced avacodas.

 

Plan things out as I live 10 minute from work and wife is an hour commute.

 

 

 
 
I had the first of many meals ready to eat from the pot roast I pressure cooked last night with huge onions & some garlic and lots of herbs and beef stock & red wine. After it was very well browned on all sides, I pressured it for 80 minutes then let the pressure drop, removed the roast and the onions and cooked 4 huge potatoes cut into chunks and 2 pounds of carrots for 12 minutes. It gets better the longer it sits. Later in the week, I will divide this into some frozen dinners for microwaving. I hope y'all enjoyed yours as much as I enjoyed mine.
 
You are both making me hungry. I'm clearing leftovers out of the freezer this week: Tuscan spareribs, spaghetti and meatballs, steaks I bought last year (marinating them for two days - they were a special: prime grade for 5.99/lb, I bought quite a few).

Well tonight... was a special night for me.

I had the opportunity to have dinner with Wayne Bergeron. Who's that you say? Well probably one of the most fabulous trumpet players in the world today. Played in over 350 films, and with more people/bands than you could imagine.

Just youtube him.

My band teacher arranged for a once in a life time opportunity to bring him in from California, to our school for clinics, concerts, and fun.

We ate at an italian restaurant. 5 cheese ziti. Was great.

I had chicken and pasta. I bake the chicken in a sauce which can then be spread over the pasta.

Sauce:
1/2 cup barbecue sauce
1/4 cup italian salad dressing
2 tsp. parsley flakes

Mix together and pour over 2 skinless, boneless chicken breasts. Bake at 350 deg. for 45 - 60 min. or microwave on high for 7 minutes. Serve with your favourite pasta.

That sounds awesome. In Plano, Tx (where I grw up) in the 70s and 80s, the band director at Plano Senior High was friends with Doc Severinsen. He came every year to play a concert with the band. Good times
