OK, Whadja have??? We had the traditional ham with green beans and garlic/gorgonzola mashed potatoes.

I boiled the ham, changed the water and did it again, then threw it in the grill with a triple glaze on it. Yummo!

I made an 11# ham since there were only two of us! :-)

Tomorrow? Leftovers. Tuesday? Something different. Wednesday? Ham & scalloped potatoes. Meanwhile the rest of the ham will be stored/frozen for breakfast slices, ham salad, and whatever else we come up with.

Jim, recipe please? Unless, of course, I'll have to double my statin after eating it!!! Looks too good to be healthy!

Wait- if you use orange cheese, doesn't the good in the orange carrots cancel the bad in the orange cheese?

Steve- neither of us likes lamb. :-( I could have done a prime rib (rib roast) but I'll save that for another day. Rich isn't a big ham eater but as long as I only make one once or twice a year, it's OK!

Everything looks great, especially that carrot casserole.

For Easter I fixed a baked spiral ham, cooked in peach schnapps, then glazed with brown sugar and orange blossom honey, homemade easter kielbalsa, scalloped potatoes, parslied new potatoes, creamed peas, mandarin orange salad, potato salad
 
This year we were invited to Easter dinner by a British friend of ours who is married to a Russian woman.

It was a lot of fun! It was an interesting mix. We had Hot Cross Buns, Salad, some kind of strange thing that looked like a mini pot pie with cheese on top and fish and chicken cooked below. They baked a ham, they also had very intricately decorated hard boiled eggs, and a cake type of thing with lots of black raisins, golden raisins, nuts and cherries inside. You ate it with butter on it. The wine served was a special Russian Easter wine that they bought at St. Peters on Red Square. It was different. Not dry and certainly not sweet.

We started off with a welcome shot of Russian Vodka, then talked for awhile before dinner and then had more Vodka shots.
That Russian Vodka really doesn't have any taste at all, but it sure does pack a punch!

We enjoyed ourselves very much.

I fixed Chicken Breasts Baked in Cream, from the Betty Crocker 1962 Picture Cookbook. I made some homemade cornbread dressing and mashed red potatoes with the skins on. A California mixed veggie, and for dessert, an English Trifle. We had a GREAT time!! Oh, and don't forget, some DRINKS!!

CARROT CASSEROLE RECIPE

3 cups Peeled carrots (cut into pieces)
12 soda crackers Crumble in hand (not crumbs)
2 Tb spoon Minced onion
2 Tb spoon Butter
2 cups Cheddar cheese (grated)

Boil carrots until done (40 min slow boil)
Reserve 2/3 cup of the liquid from boiled carrots (I always put a measuring cup next to the pot so I don't forget)
Mash carrots (I use a potato masher)
Stir in crackers, minced onion, Butter (I use electric mixer)should be like mashed potatos but lumpy when you are done.
Add pepper to taste
Add reserve liquid

Grease 1 quart casserole baking dish and add mixture.
Sprinkle shredded cheddar cheese on top

Bake 450 degree oven for 15 minutes.
 
Jimm, thanks for the recipe. I have a similar recipe too. Have you ever considered adding an egg or two to the mixture before baking?
 
Like many Casseroles you can do a lot of different things to them. I did not consider adding eggs. Does that make Carrot Quiche? I did make it once with Corn Flakes instead of crackers. Tasted the same. The recipe I posted is the original. I do like the orginal recipe and suggest people try that first then expand... Someday I will make a version with small pieces of soft cooked bacon added to the mix. Ranch or Blue Cheese dressing added to the mix has also come to mind. A little sliced almonds maybe... The possibilties can be endless.

Jim, they are endless possibiilities. I predict a run on carrots all over the world this weekend as folks obtain the ingredients they need to make this and I am gtoing to be one of them that's for sure!!!
