Flummery can mean insincere or empty compliments, it can be a soft, bland custard or a blend of fruit thickened with starch and served as dessert.

Today lets start with a blend of
1 1/2 cups flour
1/2 cup brown sugar
1/3 cup melted butter
1 cup chopped nuts
Toss the ingredients and spread on a cookie sheet. Bake at 350 for 15 minutes stirring occasionally. Cool

Whip it Good

In the large bowl of a mixer combine
2 egg whites
1 cup sugar
1 tablespoon lemon juice
2 cup pureed berries or fruit (I used Peaches today)
Whip on high speed until mixture fills the bowl

Fold Spindle but don't Mutilate

When the fruit mixture is whipped to fullness, in a clean bowl whip until stiff
2 cups heavy cream

Pile it On

Sprinkle half the crumbs in the bottom of a 9X13 glass baking dish. Carefully and quickly fold the whipped cream into the fruit mixture and pile it on top of the crumbs. Smooth the top and then srinkle remaining crumbs on top. Freeze until ready to serve.

Graham Crackers

The filling can be made of itself and served without crumbs or in a graham cracker crust. The flavor profile is a tad insipid so the textural crunch of caramelized bits and nuts add more dimension to the mouth feel. Italians make a similar dessert, Biscuit Tortoni and fold in chopped cherries and almond macaroons. Its fun to watch a bowl of nothing turn into a gallon of fluff and if you're looking for a "light" dessert Flummery is much like running into the wind with your mouth open.
