ge sensor part WB21X5207

After lurking here for a long (long) time, I need help! My GE Americana range (the 4th I've owned in 30+ years) needs a new sensor for the sensi temp burner. Any leads or suggestions?
The repair guy confirmed everything else is ok. Further, he seems to think my stove, a JHP67001, cannot be converted to a standard infinite heat control.
I hope I won't have to learn to live with a two oven, 3 burner stove. Thanks!

Hello, new to the site - I keep finding myself on here reading threads, so I figured I'd better register and actually participate a little. My shop acquired an Avacado Green J797002AV double oven with the right- front sensi-temp sensor not working, no continuity at all through sensor, burner just going to and staying on HI. I found 2 sensors on ebay as of this posting, but under a prior substitute part number (WB21x5054 instead of WB21X5207). Anyone know if these are or can be a direct substitute?

Since I work at a repair shop, we couldn't justify the cost and converted the unit to infinite switch instead (Just so happens we had one single burner knob that was a perfect match in the back for the infinite switch. Go figure...). Mostly asking in case I want to buy this unit from the shop for myself and convert it back to sensi-temp.

Thoughts?

GE switched from the earlier hydraulic controlled "Automatic Calrod" to electric controlled Sensi-temp in about 1960 which used sensor WB21X5054. It had white leads. If I remember correctly it is 10 ohms. Then around 1965 WB21X154 sensor with yellow leads replaced the white lead sensor. Part # was later changed to WB21X5207. It is 17.5 ohms. They are not interchangeable.
