Get Out Those Slow Cookers/Roasters - St. Patrick's Day Is Coming

It is that time of year again folks,you know what I mean; St. Patrick's Day, and that means corned beef brisket along with cabbage and potatoes.

So what is everyone's favourite way of doing this dish? Does anyone make an extra brisket (or two) for snacks/sandwiches?

Shops in our area always put briskets on sale a few days before St.Patrick's day, so tend to wait until then so can nab two for a good price.

I plan on making my usual St. Paddy's fare....Corned beef, cabbage, potatoes, carrots, and Irish soda bread; not bad for a gal who doesn't have a drop of Irish blood in her!! LOL

I find that the pressure cooker makes the most tender corned beef. The family will certainly gorge themselves on Friday!! I may even tint a couple of Coronas *green* to celebrate!

I love frying the cabbage the next day in some butter,...mmmm man is that tasty!

I will be making mine this week also, with the last name O'Reilly, I am almost required to. I cook mine all day in the crockpot. Have to make it Wed or Thurs becasue the gang at work are taking my out after work for my last day. I start my new job the following Monday.

i"m 1/4 Irish. Soo, I just got home from the store and got a small corned beef for myself. I don't like cabage, so I dind't get any8. I'll do mine in the crockpot also and have mashed 'taters, broccoli, biscuits.

I've got my CBB

I wasn't able to purchase one at New Year's (all sold out) but I did buy one this past weekend and will cook it in the crockpot. I have NEVER done a CBB this way, so will see how it goes.

I've never had a little Irish in me, <weg> I'm mainly German & Polish, but I will use any excuse to drink Green Beer.
And I'm off that day! Yay!

Remember, St. Patricks Day is on a Friday. So you may have to eat your Corned Beef on either Thursday or Saturday if you are Catholic.

Corned beef and cabbage, according to my reading and research is American-Irish, not Irish-Irish.

I like corned beef, and I like cabbage, but not cooked together.

Since it's just me, I am going to get corned beef at the deli, make my own coleslaw, and have a lovely sandwich on a Kaiser/bulkie bun.

I don't drink, so I'll put a drop of green food colour into my milk. So festive!

When I did drink, I never went out on St. Patrick's. Too many amateur drinkers.

I have my corned beef and cabbage crocking it right now. I will post pictures later tonight. My daughter hates it and won't be home for dinner tonight and I am going out with friends after work on Friday for my last day, so tonight is a good night to make it.

Lawrence, I too do not really drink and I am Irish, maybe one beer a year,if that, so I will stick to my Green Ice tea.

CB is OK in MD

Just read in the paper this morning that Cardinal Keeler gave us a special dispensation for eating meat on Friday.

He does suggest, however, that we give up something else that day.

It was brought to the attention of the Church that St. Patrick's day falls on a Friday during Lent, thus eating meat would not be an option for the faithful. This however would conflict with the American Irish custom of serving corned beef in many Irish bars,restaurants,and clubs having the potential of causing much economic harm since many such establishments had already purchased their briskets and probably were planning on getting on regardless. IMHO some soft soaping went on in various areas and thus we see the various dispensations being granted.

Today's local rag, the Connecticut Post told us that the Archdioscese (sp?) of Bridgeport and of Hartford have granted us Connecticut Catholics dispensation to eat any meat this Friday. However it was suggested that we too give up something else in its place.....
The article concluded by urging all Catholics to abide by the individual rulings of their Archdioscese - and observe the rule of those they may visit - so if I go to Newark on Friday and there is no dispensation then fish sticks it is!!!!

Catholic logic- so entertaining.....and flexible too!!
