Well I started St. Patricks day a day earlier.
I bought a nice boarshead Corned Beef with fresh Irish soda bread plus the cabbage and red potatoes. I really went to town. I cooked the corned beef in the pressure cooker for 50 minutes and it came out on the money (so so good). I really outdid myself. It was better than going out for it at least I got a full portion.

What is the difference bewteen Nassau County, Long Island and Westchester county?

Westchester has half the population and twice the number of roads, No exaggeration.

Traffic that night was HELL on wheels. Me and my clutch had to be in Connecticut that night by a certain time. We'll get togeher whent he weather breaks!

Happy St. Patrick's day everyone. I forgot all about it, except Richie and I discussed it the other day. But, I know what all the hoo-ha was about rain checks for corned beef at Ralphs when I was there tonight. (LOL)

It's not a secret recipe. I was in the mood and walked to the store and put the ingedrients together.
I enjoyed the dinner all by myself the weather was 2 bad for anyone to come out.
the secret:
2 cups of water / 1 cup of red wine
put in cooker with fresh cornbeef with about 6 cloves of fresh garlic and 1/2 onion plis some peppercorns.
cook for 50 minutes once steam starts to flow from cooker.

while cooking prepare cabbage cut in quarters
slice 4 to 6 red potatoes
3 or 4 cattots and 3 stalks of celery
chop up other 1/2 onion and prepare more garlic (about 6 to 8 cloves)

After cornbeef is done put it aside and keep warm - but keep same liquid in cooker. Add other ingredients to cooker and generate steam for about 12 to 15 minutes.
Than you are done.
Mix all together and enjoy yourself with a glass of wine or whatever.
