The only problem with making mayonnaise is that it does call for raw eggs. One can get pasteurized eggs, but they can be hard to find. At least where I live.

Frankly, while I have heard some say mayonnaise is much better home made (isn't everything?), I just make do with something from the grocery store. I don't use much mayonnaise (my last jar was bought and used last summer), so I don't care as much about rising prices with mayonnaise as I do other things.

On the other hand, coffee prices going up does worry me. Coffee is, for me, one of the most fundamental food groups needed for survival!
 
Question of the day: Assuming one has 8 O'Clock coffee. So, if one follows the suggested usage based on the name, what does one drink at 9 O'Clock, 10 O'Clock, etc?

Or rather inspection and safety insurance thereof, while one does purchase "organic" including dairy for much, and try to keep otherwise a close eye on things there is only so much one can do. Even if one raised one's own chickens there is a chance of bacteria infected eggs.

Finding acceptable replacements for raw eggs in mayonnaise or meringue is difficut.
