There was an additional 165° thermostat that was used when you pushed sani cycle, otherwise they would not have put that button on the machine. I know the final rinse always heated to 150 unless you push Sani cycle.

All cycles are Sani unless selecting "Fast Wash No Dry" or "Rinse and Hold" There is no dedicated Sani cycle that's found on 18 and older models. All heating phases are 150F only on the 19 models.

You have the Imperial model. The name for each model is located underneath the console panel.
Mine is the KDC-19
The one with the black control panel - Timer chrome knob on the left, two pushbuttons on right, Sani light on right side of the black area inline with that stripe.

That's weird, I could sworn you posted the machine before and it had the 3 button arrangement. I must have been thinking of another machine. I see a ton of these while browsing through Facebook Marketplace and Craigslist. It's hard keeping track after a while.

I've worked on so many stereos over the years, and forget model numbers too.

Has anyone with Hobart connections ever found any interesting notes or files on the design, production runs, or other behind the scenes content about the Hobart era KitchenAid dishwashers? It seems they’d introduce a new line about every 3 years and it was always neat to see the updates they would make.
Y’all know that Hobart patents are free online right? I read them all the time. They can be complex to read, since they’re more legal documents than technical. But the info is all there.
Why they designed the dimple fan jets, why there’s 4 arms over two. How the wash arm doesn’t fly off the shaft even though it’s not bolted on.
And my personal favorite; the soil sensing pressure filter was invented by Hobart in 1982, but not used comercially till WP implemented it in the KM and KA stainless tub series Powercleans.
