Tried the recipe from Cooks Country.

It came out ok. I probably made a mistake in choosing a Spanish onion, as I charred it and the chopped termaters, it went really I mean really intense in the flavor. Also their 3 tbls of chili powder lacked punch. Next time will go with a basic yellow or sweet onion and toss in some Manatee Island Hot sauce.

I used Red Pack diced termaters. Comes from Indiana and we used their ketchup(catsup) a lot when I lived in Indiana.

The pepper jack cheese they call for really did not add much and I will probably go for a Mexican cheese blend next time.

Thanks for the recipe.  Now is Hatch chili pepper time and we just had a case roasted and w froze the for our se throughout the year.  Mild or Hot  sure beats the canned chili peppers. After they are roasted we just measure out 8 or 16 ounces and place in bags to freeze.  When we need them we defrost and then skin them and remove seeds

 

 
Despite living in an area with a burgeoning Hispanic population, I've never had Huevos Rancheros. Yours look delicious, Ben! Will have to give the recipe a try.

I'll cop to being a traditionalist with Sunday breakfast: Fried eggs sunny side up; link sausages; hash browns; toast with jelly; milk.

A friend or two will often place a breakfast-hunting call or drop by on Sunday morning. In those cases I'll offer the choice of pancakes, waffles or toast.
 
There is a restaurant in Tucson, AZ that has been in business since the late 70's. It is just a hole-in-the-wall cafe. We've been going there since the early 80's. Everytime I am in Tucson, I try and go there, and I only get their Huevos Rancheros. They are the best I've had.

First thing I noticed was the similarity in websites between Harp's where you are and Price Chopper here. Same web developers or maybe there's a kissin' cousin relationship in some office somewhere?

The Huevos looks great, but I would need to cook them a bit longer I think. I don't do well with whites that aren't set. I'd be right with you on the flavor/heat level!

they were set. And the yolks were turning hard. I forgot about the residual cooking that occurs when you remove an item from heat, especially a baked dish such as this.
 
Chuck, those eggs are far from being undercooked.  Yolks are pink, not yellow, thus well done.  Thus the whites would be too.  That's how I like my poached eggs and fried eggs, no runny yolk for me, well cooked thank you very much!!  Perfect Ben. 
 
I wasn't commenting on yours, Ben- they look yummy. Just thought that dishes like this were supposed to be served with a runnier egg, and that's what it appeared the recipe was going after. Someone served me oeufs en cocotte poached with salmon about a year ago. I had to eat it, but...... Fish-flavored warm milk with runny whites.

Bob, I like the yolk runny for dipping the toast in- just something about the runny white!

We went to Bread & Butter for lunch today...

I ordered Huevos Rancheros and enjoyed them quite a bit. I can't eat those other items any more. I wonder if you were in Tucson before that strip center was built, when the cafe was in a tiny stand-alone building on the corner of 22nd & Bryant? (the southwest corner of what is today the parking lot) It really was a hole-in-the wall then, but the pies and other stuff were just as good.

I was born in 1983. We lived in Tucson till 1989. I do remember their old location. We used to go there quite a bit when we lived there. It would be my parents, my grandparents, then my sister and me. My grandparents, who just recently moved back to Tucson, still go there twice a week. I try and make it there at least once, while I'm in town.

 

Another place I remember going to as a kid, was Johnny's. It used to be at the location where the Denny's is, right across the street from B&B.
