Does anyone have a good diabetic cake recipe? I haven't had much luck finding one on the net just yet so I thought I'd ask you guys. My Grandmother will be turning 88 this friday and my Uncle wants to have a party for her this Saturday. Once again I appreciate any help you lovely peeps can give me :)
 
The public library

is full of diabetes cookbooks. Some are better than others. I like the Joslin books by Polin and Giedt, but my favorite is now out of print, the UCSD Healthy Diet For Diabetes, by Algert and Grasse.

However, my internist, certified diabetes educator, registered dietician, and endocrinologist have all said that if a person's blood sugars are well controlled, there is no reason why a person with diabetes cannot have a small (< key concept there) piece of "normal" cake. Even with frosting. An example would be a 2 x 2 square from a 9 x 13 pan. A slice of angel food cake is another good choice.

It is a question of choices, and information. Many people with diabetes do not test their blood sugar often enough. The more information, the more choices. If a pre-meal blood sugar is 59, (too low) a person can safely have more carbohydrate than if their pre-meal blood sugar was 259. (Way too high.)

It's about balance.

I agree with Lawrence/Maytagbear if her blood sugar is under control a small slice is ok.

 

A good desert to have is a triffle

 

1 angel food cake cut or torn into about 1 inch pices

2 4four packs of sugar free chocolate pudding

2 8 ounce free cool whips bowls thawed

1 bag of heath tofee bits

cold strong coffee or a bottloe of sugar free Kuhula flavoring

In a large bowl or trille bowl place half the angel food in bottown  and sprinkle with the coffe or the Kuhula and spread one 4 package of the chocllate pudding on top.  Spread the cool whip from 1 bowl on top of the pudding the sprinkle on half the bag of the heath bits.  Repeat.  If not serving then place in the refriigerator until time to serve.

 

 

Angel food cake is good on a diabetic diet.

Take a regular angel food cake mix dump in a bowl add one can of crushed pineapple sweetened with splenda mix with a wooden spoon pour in a tube pan and bake according to directions
