I've said for years that if manufacturers made a middle-of-the-line range with two induction elements, two radiant elements (you could even do two gassy burners if you had to) and an accurate oven they would sell like crazy. Give a set of stainless cookware with them so the customer could start cooking when it was plugged in and there would be no stress. I'd bet they quickly would see more and more demand for induction cooking. My mother was sold on it as soon as we boiled 2 cups of water in a pan with newspaper between the element and the pan - in less than two minutes. Certainly there is a learning curve, but it's very slight and most everyone could get used to the new method very fast. I love it, just wish I had room to install one in the kitchen along side the vintage 40" range space. As long as we're dreaming, how about a plug-in replacement unit for coil elements? Woohoo!
