It's time to dust off some of Grandma's rhubarb recipes and bake some memories.

Recipe no.1
Rhubarb Cake
1 cup sugar
1 egg
2 tbsp. butter, softened
1 cup milk
1 1/2 cups + 1 1/2 tbsp. flour, sifted
1 tsp. baking soda
Mix all ingredients together until smooth. Stir in 2 cups chopped rhubarb. Spread batter in a greased & floured 9x13 pan. Mix together 1/2 cup brown sugar & 1/2 cup chopped nuts and sprinkle evenly batter. Bake @ 350 degrees for 35 minutes.

Recipe no. 2

Rhubarb Torte
1/2 lb. butter or margarine
2 cups flour, sifted
2 tbsp. sugar
6 cups rhubarb, chopped
6 egg yolks
6 egg whites
2 cups sugar
4 tbsp. flour
1 cup evaporated milk
Mix first 3 ingredients like pie crust and press into 9x13 pan. Bake @ 350 degrees for 15 minutes.
Custard: Pour boiling water over rhubarb. Let stand for 5 min. and drain. Beat the egg yolks; add evap. milk, flour, and sugar. Spoon rhubarb evenly over baked crust. Pour custard over the top. Bake for 35 minutes.
Meringue: Beat egg whites and 1 tbsp. sugar for each egg. Beat until whites form stiff peaks. Add 1/2 tsp. salt, 1/2 tsp. vanilla, and 1/4 tsp. cream of tartar. Spread on baked custard mixture, bake for 8-10 min., or until light brown.

Thanks for the offer Pete, but Ontario is a little too far to go for rhubarb when I have the stuff growing in my backyard also. For anyone that doesn't know, fish guts are the best fertilizer for rhubarb & roses, no kidding. Just bury them around the plants, and next year you will be amazed at the results.

I need to find a place to grow some rhubarb in my back yard. My mom used to make rhubarb crisp and I love the stuff. I found a recipe a while back for a rhubarb upside down cake which turned out pretty good. I'm not a fan of pineapple upside down (too overly sweet) so this was a great alternative. Hoping to find rhubarb at a reasonable price in the store soon. This thread has me hungry for pie or crisp or anything else rhubarb. Oh, and let's not forget rhubarb jam on toast. That's a way to enjoy rhubarb every day of the year instantly without the planning and prep of baking!

To my knowledge, the only thing rhubarb tastes like is rhubarb. One fancy restaurant in town here makes a rhubarb souffle, which sounds like a most heavenly dessert to me!
