Since we are in high tomato season, went to the local farm and bought a bunch of heirloom tomatoes and some fresh corn and peppers. So will make a tomato salad with cucumber, celery, red onion, extra virgin olive oil, red wine vinegar, just a touch of fresh garlic, plenty of salt and some dried oregano (for some reason dried oregano works in this salad beautifully. With some fresh Italian bread, one of my favorite summer meals. If you have some fresh mozzarella, that takes it to a whole new level.
Corn gets cut from the cob and sauteed in a bit of butter/olive oil with red onion, red and yellow bell pepper and some chopped basil for a riff on Barefoot Contessa's Confetti Corn. So colorful and tasty - made it for a cookout two weeks ago and was amazed.. There were 18 people and plenty of side dishes but a triple recipe still went very quickly
Beautiful weather day here in Connecticut and am off to a Cuban pig roast - the pig has no interest for me, but I wouldn't miss the several variations of rice and beans that will be served. Since it will be outdoors - the only issue today will be the abundance of yellow jackets that seem to infest our area in September. Actually had to leave the beach after only 30 minutes today since they were everywhere. It was almost Sci Fi...
