This is an old family favourite. My nan made a fabulous version.
Here in Australia they are called Lemon Delicious, and are generally made as one large pudding, not individual ones.
I believe in Australia it is mandatory to make an excellent Lemon Delicious or you won't get your Grandmother's license.

It sure looks good.  Will file it away for some mid winter goodness, too many treats coming up shortly.  Deep in January this will be a warm welcome change.

<span style="font-size: 14pt; color: #008000;">Just about everyone here (except me) has at least one lemon tree. Because most of these people live in gated communities where you can be fined if fruit isn't picked and left to rot, I see most of these lemons going into the garbage can which is a shame especially since lemons and limes aren't cheap in the market. My mom used to squeeze all the lemons by hand and freeze the juice in ice trays. Then the cubes went into a zip lock bag to be used as needed. Maybe I'll have to sneak a few lemons off the neighbor's tree and try this recipe. It looks great.</span>
 
Made these tonight for Christmas Dinner, absolutely delicious!!! Was surprised at how little lemon it took to give a wonderful flavor. It was so good we ate them after a 'heavy' meal and we all were licking the spoons afterwards!! Next time I'll consider my favorite whipped topping for the top, Dream Whip. This is a keeper!! Thanks for sharing this recipe Kevin.
