I need help with the wiring to my dryer. The wiring harness can’t reach the ground screw. Also does the wiring looks right? Black to black. White to white. Red to blue.

Wiring to the terminal block is correct. That access cutout should have a cover and the hole located at the top center is the screw that holds the cover in place. I scratched some paint off and used that screw as the ground. It's not the ideal place for a cabinet ground, but it's better than nothing.
You're missing the strain relief for the power cord. I would recommend attaching that.

The strain relief came with the new power cord. I just haven’t installed it yet. The dryer didn’t come with a cover plate. Is there any danger of running it without one?

I'd certainly call it dangerous.
It could be you reaching back there, and you remember it is exposed and are careful.
But it also could be your spouse, trying to unplug a misbehaving machine.
Or an appliance installer or repair person, with no knowledge of the missing cover.
Or it could be one of your kids, after you're gone, and nobody is there to warn them.
It's 240V, it's open, and it's on the back where it can't be seen until your hands have been back there. Just put a cover on it.
It could be you reaching back there, and you remember it is exposed and are careful.

Does anyone have a part number for the terminal cover? Or a link to the part?
If you wanted to make one, I believe it was just a piece of stamped sheet metal.... Picture a rectangle, with two cuts about a third of the way across the bottom to create three tabs, one of which is bent forward or backwards so that the three tabs straddle the sheet metal at the bottom of the opening when installed. The top then just has a single hole drilled in it, for retention by a screw in that top hole.
It's been a while since I saw mine- does that sound right to someone who has one handy?

It will work, but if you wanted to extend the ground wire it should be #10 Ga wire and probably better connected to the cords terminal, it would be safer to drill another hole in the cabinet and securely bolt the green wire to the cabinet.
Do be sure that the 3/8" nuts are really tight or the black and red wires on the block can overheat and burn, and yes do not leave the cover off I once had a customer that was nearly electrocuted trying to grab a metal coat hanger that had fallen behind an electric dryer that had a missing cover.
