Mushroom Spinach Curry Soup

We opened the cottage this past weekend and celebrated by making this soup for our dinner one night - served it with some warm crusty rolls. It's not quite summer here, and wasn't much of a spring, so the weather is still good for soup. This is vegetarian and the entire thing takes about an hour to make.

Looks tempting.  Next time I get mushrooms I'll give it a try, but I might only blend half, I like a few chunks in my rustic soups.  Pair it with a nice loaf of fresh bread, yummm...
