I bought a 10 inch Corning ware range topper skillet in great condition at the flea market. How does the cooking performance measure with regular corning ware?
I have a gas oven and use a simmer mat under everything. I also have a glass top range, but I don't think the Aluminun base will function well on it.

Thank you,

The aluminum bottom

did improve heat distribution a great deal. However, this is still Corningware, so one inescapable fact remains: it does not heat up or cool down quickly. Lower heat than with all-metal pans is a must--at least in my experience with it. My sister wanted mine, so I gave it to her.

I don't remembering them staying on the market very long.

Unresponsive at best. The trouble is that the cookware heated up slowly so people tended to start heating it over higher heat, but once cooking started, it did not repond when the heat under it was lowered so food burned. I would not use it for really heat sensitive cooking operations unless you are willing to start with low heat and wait a long time for the pan to warm up. The other problem is the way food sticks to Pyroceram, especially if the pan gets too hot and then you have cleaning problems.

Keep us posted on how you like it.

Corning Range topper vs Regular corning ware heating

I timed the range topper 10 inch skillet and other various corning ware, including a Visions 'chicken fryer' skillet, since I don't have another 10 inch skillet to compare. The range topper skillet did not heat up significantly faster than the the others. Heat distribution was about the same too.

Incidentally, I did appreciate how long the thick glass bottomed Visions skillet
took to cool. It retains heat for a longer time than anything.

The beautiful new skillet will be used in the oven mostly.
