I thought I'd share a recipe that is so easy to make and so good, especially when time is short and so are ingredients.
You'll need....
A 13x9 inch casserole dish, or smaller if there are only 2 of you
2 to 6 skinless boneless chicken breasts
1 12 ounce package of wide egg noodles, or any pasta you wish (half if making a smaller portion)
1 24 ounce jar of Pace chunky Salsa, or any salsa you prefer, (use half if making a smaller portion)
Heat your oven to 350. Layer the casserole dish with the pasta. Place the breasts on the pasta and season them if you so desire. Pour the salsa over the breasts and spread with a spatula. Pour about a cup of water into the bottom of the dish. The moisture from the chicken and salsa will help cook the pasta, so you won't need much water if any at all. Cover with foil and cook for 45 minutes to 1 hour, depending on the size of the breasts and how well you prefer the chicken cooked. When done, serve up and enjoy!
