Roasted Beets and Squash

I know these hearty fall vegetables are not everyone's favorites, but we can't get enough of them this time of year. Michigan produces quite a bounty of these crops, and prepared well they are all kinds of delicious! We like roasting.

Love both, have been doing squash for the past few weeks.  I prefer oven roasting,  I use your method often but have been doing them in the microwave lately.  Acorn, I just puncture a few times and cook whole, butternut I cut in half,add a little water to a square glass dish place the halves and cover with saran, cook in microwave for 10-15 minutes till tender.  Then I scoop them out blend together add butter, salt pepper and honey to taste.

What says "Fall" more than roasted beets and squash?

Recent dietary restrictions nix the squash for me...but boy, I could go for roasted beets. Love your vids, Kevin and Ralph.

Delish!

I roast beets, squash, onions, carrots, garlic cloves and sliced Italian sausage all together with some whole berry cranberry sauce. Yummo!! One pot meal!
