This works great, makes a crispy light waffle every time.
1 egg
1/4 cup cooking oil
2 1/2 cups Jiffy Baking Mix
10 oz club soda
Mix all together quickly, but do not beat, it will be slightly lumpy, bake in hot waffle iron.

I've had a similar recipe for many years and it renders a light and crispy waffle, but I like the ratios in yours better so I'll have to try it.

 

Here's what I have:

 

1 egg

1/2 cup oil

2 cups Jiffy Baking Mix

1-1/3 cups club soda

I'm going to give this a try - I always have club soda around! I like the Jiffy Baking Mix - it's much less expensive than Bisquick and I think it does a good job.
 
The odd thing is!

You would think you had taken the time to fold in egg whites, the waffles come out light and crisp instead of soggy like so many mixes.
