Lecithin in granular form can often be found at healthfood, vitamin and "body building' shops.

Vitamin "C" tabs can be crushed up for ascorbic acid.

Eugene - every one of your baked creations looks mouth watering good! I especially love the giant sandwich rolls and that bread - the color of the crust is just perfect. And I agree with you, I much prefer electric ovens for baking.

Darren--- It is a lot of fun to have a well-equipped kitchen. All of my appliances are Frigidaire except for the dishwasher. I realize it's not the same as having GM-era Frigidaires, but I grew up with parents who bought everything at Sears, so our house was all Kenmore. A lot of people had Frigidaire appliances in my home town and I was green with envy. I swore that I would have nothing but Frigidaire appliances when I grew up. Who knew the whole White Consolidated Industries debacle would mark the end of the thumpers? So even though they are merely "Frigilux"appliances, I still like having the Frigidaire brand name all over my house. Oh, one more thing---every dish came out spotlessly clean. I love my LG.

Petek--- I don't think grocery stores carry dough conditioners. You'll have to get them online. I get mine at the Prepared Pantry.

Launderess---Up late again I see, my dear! As always, your posts are an education. I vote we create "University of Launderess" t-shirts! I love Hattie McDaniel---thanks for the video link; but I'm very glad I live in the age of self-cleaning ovens, air-conditioned kitchens, and automatic dishwashers.

Song Of The South

Which is film the above clip came from has to be one of my all time favourite childhood movies. There is a huge clamor for Disney to remaster and release or just release again SOTS, but too many critics claim the flim has negative racial stereotypes so Disney as of now isn't bothering. Mind you these same persons have lead to the mass editing of so many vintage cartoons as well for the same reasons.

Final Off Track Post - Hattie McDaniel

They say the secret to good acting is never to stray too far from one's own character, and that suited Ms. McDaniel to the ground.

The wise,formidable, down to earth, practical and good-natured woman you see in "Mammy" from GWTW and so many other characters Ms. McDaniel played was nearly as she was in real life.

While some in the African American community slighted her and took offense to all the mammy and maid roles Ms. McDaniel played her quip back was "I'd rather play a maid than be one". HMD as a few other of her peers at that time knew the work for blacks in Hollywood at that time was very limited; so she took what was offered and made a darn good living at her craft. At one time she was one of the highest paid actresses in Hollywood black or white.

The late Lena Horne tells a story of HMD's practical side.

Having been offered a role in the film "Cabin In the Sky", Ms. Horne a new arrival to Hollywood (separated from her husband with children in tow) wasn't thrilled about having to sing what would later become one of her biggest hit songs, Stormy Weather. The studio however was not going to budge and if Ms. Horne wanted the part the song came with it.

In this confused state LH went to have lunch/tea with Hattie McDaniel to see the "Queen of Black Hollywood" advice. Ms. McDaniel pulled no punches:

HMD: You got children?
LH: Yes
HMD: You got a husband?
LH: No
HMD: You got any money?
LH: No
HMD: Sing the song!

And that was that. *LOL*
