As promised....
Here's the finished product, and the recipe as written. I'm taking this to a polka club board of directors meeting Monday evening. I'll let you know how it tastes later.
Apple Cake
3 cups diced apples
1 cup nuts, chopped
2 cups sugar
2 eggs
1 ¼ cups salad oil
2 tsps. vanilla
3 cups flour, sifted
1 ½ tsps. baking soda
½ tsp. cinnamon
1 tsp. salt
½ tsp. nutmeg
Mix in one bowl all at once, adding nuts and apples last. Beat until apples are no longer visible. Bake at 325° for 1 hour 15 minutes in a tube pan greased and floured. Let cool before removing from pan. Do not turn upside down while cooling.
I added this sauce over the top to make it a Caramel Apple cake.
Sauce:
1 cup firmly packed brown sugar
¼ cup milk or light cream (½ & ½)
¾ cup butter or margarine
Mix sauce ingredients and bring to a gentle boil for 3 minutes, stirring constantly. Pour over hot cake while cake is still in the pan. Let cake cool completely before removing from pan.
