As promised....

Here's the finished product, and the recipe as written.  I'm taking this to a polka club board of directors meeting Monday evening.  I'll let you know how it tastes later.

 

Apple Cake

3 cups diced apples

1 cup nuts, chopped

2 cups sugar

2 eggs

1 ¼ cups salad oil

2 tsps. vanilla

3 cups flour, sifted

1 ½ tsps. baking soda

½ tsp. cinnamon

1 tsp. salt

½ tsp. nutmeg 

Mix in one bowl all at once, adding nuts and apples last.  Beat until apples are no longer visible.  Bake at 325° for 1 hour 15 minutes in a tube pan greased and floured.  Let cool before removing from pan.  Do not turn upside down while cooling.

 

I added this sauce over the top to make it a Caramel Apple cake.

 

Sauce:

1 cup firmly packed brown sugar

¼ cup milk or light cream (½ & ½)

¾ cup butter or margarine

Mix sauce ingredients and bring to a gentle boil for 3 minutes, stirring constantly.  Pour over hot cake while cake is still in the pan.  Let cake cool completely before removing from pan.

The handwriting looks like that one of my elderly neighbors handwriting - very careful. My equally elderly parents have weird handwriting - my mothers is very angled and with tight loops and long spacing - I guess that means my mom is uptight or something and my fathers is illegible, though my dad has good block writing (I can't even remember what his script looks like, now that I think about it). Mine is awful, to say the least.

That cake recipe is making me hungry...

The recipe is in her handwriting.  I took the cake to my polka club board of directors meeting last night and served it ala mode. It was a smash hit.[/COLOR]
