So today I just received from FedEx item I've been wanting for a long time. A Vollrath Cayenne full size pan warmer. I have a set of SS steam table pans I use sometimes, one full size and two half size. Normally I just take my warming tray and use a half size one on it, but it limits what I can serve in it. Plus I found the items tend to overcook due to touching the tray directly.
This should let me serve two things at once in the half size pans, or maybe I'll get a set of 1/3 size pans and can serve others.
I haven't opened it up yet. Unfortunately it's a lot bigger than I was envisioning, I should have known that though, seeing and using similar but other brands at events. So it may be harder to store than I thought.
New these things go for about $140-170. I got this on eBay for $20, usually they go about $100 used but I was the only bidder. Seller says used twice, still in the original box too.
We'll see how well I like it.
