The older machines had a sight glass in the tanks to see the condition of the water.
Notice where the locations of the temperature gauges are. Not exactly Eye Level like the Superior Hobarts. The Final Rinse is InLine but rather hard to see at a glance.
They are still using those "SaniStream Spray Boxes".
I had one of these in the Kitchen of my first job on the Cape. It was a Flight Around. That machine was offline more than it worked.

No testing, no returns
Any commercial machine is pretty basic.
Tank, Pump, Timer or Conveyor, Motor and Solenoid Valve.
Unless the motor dies, most commercial machines are functioning or barely when removed.
