My Thanksgiving leftovers will be gone tomorrow night, so with all this poultry being eaten, I thought a nice piece of red meat would be in order...
Here it is before going into the oven. 2.5 hours at 325 should give me a nice medium cooked roast...

Mmmmm... That roast looks great. I spent Thanksgiving in Spring, Tx with my family. Got home last night and decided I didn't get enough turkey, so I cooked my own today - tried a new stuffing idea - cornbread with Italian sausage. Honestly, the Italian sauage was too stong, next time I'll use a mild sausage.
 
Well, I don't have a camera. It's upper 30s and has been raining all day. I made two meat loaves and some sweet & sour pork. After church tonight, I had some chili over rice with cheese. Ran the dishwasher earlier today and am getting ready to run it again
 
and served with

Mashed taters, broccoli, and some Pillsbury big & buttery crescents(in the oven at picture time)
Accompanied by a nice Riesling from Lynfred Winery here in Roselle.
It was a damn good dinner!

I have much turkey leftover. So, I made turkey burritos instead of chicken ones or beef ones. Pretty much put shredded or sliced turkey in a pan with some butter, add taco seasoning and water for the meat base. Then make your favorite burritos. Turn your lefovers into a mexican meal with cheese, salsa, lettuce and good tortillas and watch football! Or soccer, or golf, or whatever. We had a tailgate party today and everyone thought I was brillant. It was really easy.
