So I had a few over ripe bananas sitting on the counter, I decided to make a loaf and share the recipe I use. It turns out super moist and is sooo easy. I got this recipe from a friend who found it in a cookbook. Ok here we go. 50 year old recipe banana bread-
4-5. over ripe bananas (depending on size)
1 tsp. baking soda
1 egg
1 cup sugar
1/3 cup butter or oleo (I have only used oleo)
1 tsp. vanilla
1 pinch salt
1 1/2 cups flour
1 scant tsp. baking powder
(my addition) 1/2 tsp. pumpkin pie spice
1/2 cup of chopped nuts (optional)

Mash bananas with baking soda, and combine with remaining ingredients in mixing bowl. Pour into a greased loaf pan and bake in a 300f oven for 50-60 minutes or until inserted toothpick is dry. (mine took about 70 minutes, but start at 50 and check it)

Wow, I just came in from mowing the lawn and was thinking since I had bananas I would make a loaf of banana bread. Sat down here at AW and found this receipe. I am going to make it this afternoon. Good reciepes are getting harder to find. Thanks for sharing this one. Dano
 
YUMM-O!!!!

Rich has been making banana bread about every-other week for a little bit now (my old Fanny Farmer cookbook recipe), so I'l have to print this one out for him to try.

I like the crunchy parts, like the ends, myself! Rich wipes the pan with oil to ensure that, but I'd just a soon put it in individual pans and have mostly crispy bits!

Looks better than mine! Mine came out a bit lopsided because the oven is slightly off of level. (we live in an old house, so nothing is level) As of a few minutes ago, less than 24 hours after I made it, 3/4 of the loaf is gone (3 people eating it). Be careful to keep it covered tightly after it cools, fruit flies love it as much as you will!
 
I made this banana nut loaf this week, using this receipe and it was delicious. I plan on making it again sometime. I didn't use any rum and it was good. We had company over and they wanted the receipe.

Sounds and looks good.

My go-to cookbook for old-school stuff is the "Better Homes New Cookbook" which has been published for a gazillion years. Mine is the 1981 edition, and by spot-checking is pretty much a dead ringer for my Mom's 1954 edition. Anyway, their recipe is:

1-3/4 C flour
1-1/4 t baking powder
1/2 t baking soda
3/4 t salt
2/3 C sugar
1/3 C shortening
2 eggs
2 T milk
1 C mashed ripe bananas
1/4 C chopped nuts

350F for 60 min +/-

Works good for me, only downside is that it uses up every measuring cup in the house.
