Before you say "What on earth..." let me explain! In North Carolina BBQ or however you want to spell it, is a noun not a verb!, here it means pork cooked over hickory and oak coals 8 to 10 hours , then chopped and served either on a plate or sandwich,,,with, this type of slaw, french fries and hush puppies, this slaw was invented many years ago by a lady who worked at the original Stameys Barbecue restaurant in Lexington NC, about 20 miles from where I live, it is the ONLY kind of slaw Donald will eat!!it goes wonderfully with about anything, but most especially with pork, or BBQ chicken, it will keep literally for two months in the fridge and seems to only get better!!here is how you start,
Remove the core from one large head of cabbage...VERY IMPORTANT!!! if you dont, it will get strong and bitter in a few days!!

Then!

Pack it into a container with a tight fitting lid, I use a old Tupperware bowl, place in refrigerator, it improves with age, a real North Carolina recipe!

ALSO GOOD ON!

A hotdog!! or a hamburger!! around here ,"All the way" means slaw, chili"No beans, just the sauce", and mustard, this goes for hamburgers and hotdogs, another NC thing I guess.

Please, could you post some details about your KitchenAid slaw shredder?
The only type I know is the regular drum type thing with 4 drums.

It is called a Rotor vegatable slicer chopper, I will try to post a few pictures of it later today, it has several disc type blades, one has adjustable knives for slicing, the front has a tube that you use for carrots, cucumbers etc, then the other discs are a coarse chopper blade, which I used to make the slaw and a fine blade for grating cheese etc, it also had a ice crusher blade, it is known as the Pelican, because it looks like a Pelicans beak!

I have never seen or heard of a cole slaw like this (not that I'm any expert on NC cuisine!)The ketchup is a new experience for this Yankee - I think I'll have to give it a shot...I may like it! What if you made it with chili sauce or bbq sauce instead?

I had slaw at Bunyan's Barbecue in Florence, AL that was made with hot pepper sauce- it was really good. They put it on the pork sandwich or as a side.

I have always thought of barbecue as a noun, maybe because my Mom was from the south (Hattiesburg, MS).

We have a local drive-in restaurant called Chuck-a-Burger that puts a similar slaw on one of their hamburgers. Once I tried it, that's all I've ever ordered there. At home, we make the mayo/vinegar/sugar dressing most often.
 
I almost fainted when you added ketchup.. BUT I'll give it a try. I make a big batch almost every week so I'll keep some out and do a test run, who knows.

There was a drive-in here up the street many many years ago that had their own special slaw/relish for their burgers and footlongs. It was definitely not a coney sauce and this has me wondering if maybe it was made with cabbage
 
I love cole slaw. But I like to use regular cole slaw dressing. But I'm never really sure how long it is safe to leave it in fridge. I would think two months is way too long
