I made a beef roast with carrots, onions, potatoes, and cabbage cooked in V8 Juice in the crock pot yesterday, and it was delicious. I seasoned the rost with garlic powder and onion powder then browned it in the cast iron skillet. It was delicious!
 
One of my favorites!

The acid in the juice tenderizes the meat, I think. The roast is always well-flavored, and melts in your mouth. I use V-8 as a base for vegetable soup, too. Always a hit.
 
It's always very good.  Mr. Food has a baked winter stew that has V8 as a base too that I made once or twice last winter that was out of htis world!!!

My mom used to make this alot when I was growing up. She used round steak cut into serving size pieces and called it swiss steak. She'd remove the meat when done and thicken the meat/V8 juices with flour to make a thick gravy to pour over the mashed potatoes she's serve with it. It made tender, flavorful mouth-watering meat. Yum!
 
I'm going to have to try this next time I make a roast

Here's an odd way to make a roast a co-worker told me about one of his distant relatives making.
They would place a roast in the crock pot and then pour a jar of pickle juice over in and cook on low.
I tried it and it was extremely tender and very flavorful.

I usually use a block roast or a rolled rump
 
My mother used to make her own home canned tomatoe juice and canned tomatoes. She would take a couple of round steaks, add a jar of her canned tomatoes or tomatoe juice, add sliced onions, sliced potatos, sliced carrots and slow cook it in the oven or crock pot, it was always tender and delicious during the cold winter months.
 
I like V-8 juice, but have never tried it with pot roast, will have to try that, but I have tended to use tomato paste and the liquid from the veggies.

But...if you have access to Parsnips, they can add a lot to a pot roast - not as sweet as a carrot, but good stuff, and kind of becoming a lost vegetable these days.

Parsnips just aren't popular these days - they are like Beets and Rutabagas any more.
 
In a hurry?

Autowasherfreaks recipe, works well in the pressure cooker too.  Just bring it up to pressure slowly.  My s/o likes to stuff the roast with garlic he's from NOLA.  Kevin 313, if you enjoy bloody mary's try Smirnoffs new prebottled when you get a chance, if my taste buds are correct the heat is more from horseradish than pepper.  Its not for everyone, but mixed 1/2 and 1/2 with your regular mix its a crowd pleaser.   Thanks Autowasherfreak,  i will slip this on my "to do" list for cold weather, my mom also made this very similar to yours. I do think the acids tenderize the meat.  alr
