Caramel Icing
This is one of my Grandmothers recipes, it is no where as easy as some, but is very good, my Mother said she remembered Grandmother beating it with a spoon years ago, my arm would never hold out that long because it takes a LONG time even with a mixer!

Into a heavy saucepan,
4 cups brown sugar
10 Tablespoons cream
1 cup butter
Bring to a boil over med heat, stirring constantly, let boil two minutes stirring only occasionally, pour into mixer bowl and add
1/2 tsp baking powder
1 tsp vanilla
Beat until it starts to lighten in color and gets thick, this takes a long time, but once it starts to thicken, you better work fast or you have a bowl of fudge to eat!! ice cake, if too thick, stir in a little cream.

Brown Beauty

I am making this for dad.  He loves anything brown sugar, caramel, penuche or crispy.  I'll carmalize walnuts to top it and he'll eat it up.  I love those old fudge frostings.  Boil it too short and its taffy like goop.  Boil it too long and it a rock.  Boil it just right and beat it to the last minute between losing gloss and fudge.  A bowl of ice helps to cool it in the beginning and a bowl of hot water to set the pan in helps to keep it spreadable while frosting the cake.  I cannot wait to try it.  I wish I knew your grandma, she taught you so much and I almost feel her warm presence.

We just made a gluten & dairy free version this past weekend, and it turned out excellent! The frosting especially was wonderful, albeit sugar-coma inducing. Thanks again for sharing the recipe!
