We made this as a side dish to the Greek style meatloaf last week, but it is also good at room temperature as a summer salad. If you haven't made couscous, it cooks very quickly in boiling water, but on its own doesn't have much flavor. A simple pesto with parsley and dill adds a lot of personality with some raisins and toasted almonds in the mix for sweetness and crunch.
