We had homemade mac-n-cheese last night. I made it as a side dish, rather than with peas and a protien like chicken or tuna in it for a main dish.

Pan-fried pork chops and a salad rounded out the meal.

Yum!!!

Left rear: Mock spanakopita. (Spinach and cheese pie with onions, leeks, scallions and feta cheese). Bisquick instead of Phyllo.
Left front: Boiled dandelions, dressed with oil and lemon.
Right rear: Soup using leftovers. Mostly pork and cabbage in a tomato base with some rice. (Tastes better than it sounds)!
Right front: Roasted vegetables onions, carrots, celery scallions.

I'm trying to cut down my meat intake for health (HUSH!)

We had a restaurant near us that served the best clam chowder (white, "New England" style) in a sourdough boule!!!

Are you a white or red chowder fan? Tough to tell since you're from Texas!

Oh I'd love some of your real mac & cheese, I would probably eat that whole dish by myself.

Currently I'm on a bulking up program for my weight training so I'm eating more or less continually throughout the day. Sounds easy but it isn't for me.
 
Chuck, I eat and cook only New England clam chowder. Mom is from Scituate, Mass. on the coast. It is so easy to make, the hardest part is cutting up the onions and potatoes.
 
PSEUDO-SPANAKOPITA
Mock/easy spinach and cheese pie.

2 ten ounce pkgs frozen chopped spinach. (just over 500gr)
1 onion, finely chopped
1 bunch scallions washed well cleaned and choipped
1 cup feta cheeses (crumbled with fork) 230 ml
1 cup grated Romano cheese 230ml
3 Eggs
2 cups Bisquick (self-rising flour)460ml
2.5 cups WHOLE milk (575 ml)

pepper and dill to taste.

Let's make the filling:
In 1/4 cup oil (57.5 ml) saute onions and scallions for a few minutes. Add spinach and defrost over medium heat. Stir freqeuntly. Add up to 1/4 cup more pil of needed, or if you need to use high(er) heat. Spinach may be defrosted ahead of time in the microwaver. The water from the frozen spinach is needed to steam the filling. STIR frequenlty with a wooden spoon so nothing sticks Be sure to scrape the bottom of the pot.

Saute over low heat until water evaporates and spinach darkens in color. Inthe dame pot or in a bowl remove form heat. (If time allows allow to cool) Add in other ingredients, eggs LAST. MIX thoroughly.

THOROUGHLY grease a 9" x 12" (23 cm x 33cm) baking pan with olive oil and a paper towel. You may use pam or whatever else works for you. BE THOROUGH!

Bake in a moderate oven at 350*F (175*C) for about 45 minutes. Test for donenss as you would a cake with a toothpick. [When it pulls out clean, you know you have been successful].

Allow to cool a bit before serving congeal the cheeses.
 
Homemade

Chuck I love the look of your Jennaire oven and the chrome surround. Not only does it cook and brown to perfection the gleam reflects the good taste of the chef! I made Macaroni and Cheese for the kids when they were little and they refused to eat it claiming they hated homemade macaroni and cheese. I reminded them it was the first time and they reminded me Grandma made it. My folks have a 360 acre ranch and all the beef you could ever want to eat. The kids also turned their noses up at that saying they didn't like "homemade meat".
 
NY steak with a big side of spätzle and a salad, and the cutest waiter I've seen in quite a while.

Steve- Boiled dandelion is awesome! Do you use garlic and oil in yours?
 
oooh no. That appears to be the Italian way. I just can't! Actually the flavor is not my favorite either.

A Sicilian friend of mine tells me that in Italian culture/ cuisine bitter foods are believed to be very healthy.

The water in the pot turns a rust-colored red. That's all the iron content. Great for women to drink as a tonic. But not so good for men. Escessive iron causes heart-attacks. Women lose iron, men retain it.

Your dinner looks awesome, where did you get dandelion greens this time of year anyways?' I love them but only get them when I collect them from the front yard in spring. I fix mine tossed with some hot bacon grease, salt, crumbled bacon, and some hard boiled eggs

Tonight I fixed lemon-chive chicken cutlets, fettuccine primevera, and lemon squares for dessert, naturally served with a few glasses of Bovine Winery Raging Bull red wine.

We had baked chicken, mixed veggies, and baked potato, with chocolate cake for dessert. Took the rest of the cake to work to share this morning.

Nope. That is custard-filled phyllo. I'm not one for custard.
Can't stand all those honey and syrupy Greek/Turkish/Middle Eastern desserts. Way too sweet.

Give me poundcake and I'm happy. Anyone have a good/favorite recipe for poundcake?
 
Friday evening was the last time I really cooked--cooked chicken breast, scallopped potatoes (Gary in Canada's recipe) and broccoli. Saturday I roasted a very large baking potato and lots of chopped broccoli!!
 
Had tuna salad and chipotle corn for lunch. Went out to a BBQ place tonite and had smoked turkey sandwich and lemonade. Was very good. Usually get side items such as baked beans or potato salad there, but as I'm on diet restricting fat and salt, seemed like everything they had was either too greasy or salty.
