My LG FL locks at some point during the fill cycle. The "Add Garment" which would unlock the door refuses to do it once a certain amount of water has entered the tub. I assume this is so no water can spill on the floor when the door is opened.
 
Temperature

It's also temperature related too. The door lock won't release if the water is above a certain temperature. My machine does a drain if I use the "extra hot" temperature before releasing the door lock. While on other temperatures it does not.  Actually my hot water is about 140 and it does it on the "hot" setting too. 

 
 
My Samsung

locks before it does anything. There are two clicks of the lock intitally. One may be to test it. You can add a garment until the icon goes out. It can take up to a minute to unlock, longer once the icon isn't lit. If the hot temp, or steam is selected, once the temp, rises above a certain point, or too far into the wash, it will not unlock.
 
My LG 3570 locks the door as soon as you press "start." When you hit "pause" the machine stops and the door unlocks. You can unlock and open the door anywhere in the cycle. The door does not unlock during spin until the tub stops rotating. Also, as others noted, when it has heated the water it will not unlock door when hot water is in the tub.
 
My Maytag 5000 Series W/Steam

a Duet clone. Locks the door as soon as you press start. If you need to add clothes during the add portion of the cycle, you press pause and the door will unlock providing the water level is not too high, or water temp too hot. If either of these conditions occur it will not unlock until a drain and in the case of too hot it will add cold water to the clothes before unlocking.
