Guys,
nice and crisp outside this morning so I decided to cook, bring out all the thrift store appliances
1st
Corrot Pineapple Bread
2 cups Self rising flour
1 1/2 tsp cinnamon
2 cups sugar
3 eggs
2 tsp vanilla
1 cup oil or applesauce
1 cup grated carrots
1 8 oz can crushed pineapple
1 cup chopped pecans
mix all bake in loaf pan bake at 325 for 45 min or until done

chopped the carrots with the sunbeam power plus with shredder att, mixed with sunbeam 5 speed avacodo portable

then 6 quarts of spagetti sauce in my farberware 8 qt heavy dutch oven

then 2 meat loaves old southern favorite

THROWS flour in my face dang im beat now on to laundry in the Black Kenmore Elite.

When do we eat! I made two beef roasts with all the veggies in my Hamilton Beach electric roaster/oven. I know it's modern, would love to get my hands on a old Nesco.

NOTE

use 2 loaf pans, i tried to use 1 and got a nice mess in the oven, now off to my ironing, nothing beats a old GE stream iron and a can of Faultless starch
 
Carrol Pineapple Bread

I'm going to make this sometime this week, it sound delicious. I've also been hungry for banana nut bread, might have to make a couple loafs of that as well. It's been nice and cool here highs in the 70's during the day and into the mid 50's at night excellent sleeping weather, nice to have the ac off and windows open. I made a carrot cake last night, but I cheated it was a box mix.

let me know how it turns out ive heard u can bake it in old coffee cans to give as gifts.
now ive got to bake a pound cake for the b/f's 50. my mixer is gonna be hot for the next several days.

A few years ago I made homemade zucchini bread, pumpkin bread, and banana nut bread in mini-loaf pans and gave to co-workers as Christmas gifts, and they loved it. I've never head of baking in coffee cans, but it's a interesting idea use the small coffee cans.

How did the sauce and the meatloaf turn out. I've never made homemade spaghetti sauce, I usually buy Ragu and doctor it up. The roasts that I made in the Hamilton Beach roaster came out perfect. I made a vegetable soup with the left overs.

Coffee cans: I still used them when I make brown bread. They are easy to use, actually. After baked or steamed, use your can opener on the bottom to slide them out. Easy.

Jim, homemade spaghetti sauce is really easy, and much better than the store-bought varieties. In our house, cooking is not an exact science, try this:

olive oil
1 large onion, diced
2 cloves garlic, crushed
1 lb. hamburger (or sausage meat, or a combo of both! (see below))
2 large cans tomato puree
1 small can tomato paste
Italian seasoning, salt and pepper, all to taste.

Fry-up the onion. Add the garlic. Add the hamburger. Add the spices. Add the tomato puree and paste. Simmer on LOW for a few hours at least. Let it thicken-up.

NOW:
--Since the 'fridge always has leftovers, Add some left over beef, sausages, chicken, turkey, pork, etc.
--Leftover red wine ... add some in.
--If you like the taste of Bay, add a bay leaf in.
--If you like black olives, slice up a few handfulls and add them
--left over pesto (or basil leaves (dried or fresh)... add it in!

VARIANT: add green olives and ham -- we call this Montepulciano sauce as that's where we first had it, but they used prosciutto instead of ham. I like the boldness of smoked shoulder myself.

The sauce sounds delicious, I will try it the next time I make spaghetti. I love the flavor of bay leaf, I usually put some on top of my roast. It's only 11:21 and I'm hungry, LOL.
