So far my gluten free diet experiment is going well. My digestion has improved considerably. I'd like to say all my aches and pains are gone too, but that may take a while ;-).
For years I thought the problem was lactose intolerance. So I've been avoiding milk for that reason. Well, yesterday I decided to test that theory and got a full gallon of the stuff. Had it with cereal last night and again this morning (new gluten-free Corn Chex). No problems. Since my background is nearly 100% European it makes sense that I'm not lactose intolerant.
Eventually I'm going to ask my doctor for a blood test for gluten intolerance (there is one). All I'll have to do, apparently, is eat about four pieces of wheat bread before hand for the test to detect a problem. But for now, since there is no real treatment other than changing diet, I'm in no hurry to have my suspicions confirmed by science.
