Serenades and Red Hats.....

Tim: What a cute idea! Did they sing "Let Me Call you Sweetheart"? That one definitely chokes you up!

Kim: I think I qualify for a "Pink Hat". In a few more years (OY), I'll be donning my "Red Hat". How's about I bake a batch of Butterfinger Bars and join y'all for coffee! YUM

These are so to die for......

Here you go Lawrence....I will not be held responsible for the caloric content of these bars! It's the icing that really gives them their richness. They are sooooooooooo yummy!

Butter Finger Dessert Bars

1 cup butter at room temp.
2 cups all purpose flour
1/4 tsp. salt
2 tsps. granulated sugar
4 eggs well-beaten
2 cups pecans
2 cups brown sugar
1/4 cup all purpose flour
2 tsps. baking powder
1 cup shredded coconut

Mix butter, 2 cups flour, salt and granulated sugar until crumbly. Press into 9x13 pan. Bake in preheated oven 10-15 mins. at 375 degreesF. Mix eggs, pecans, brown sugar, 1/4 cup flour, baking powder, and coconut together. Spread over cooked pastry. Bake 15 minutes at 375 degreesF. Cool before icing.

ICING:

3 cups 10X powdered sugar
6 tbsps. butter
2-3 tbsps. milk or cream
2 tsps. vanilla

Combine all ingredients and mix well. Frost and cut into
1x1 1/2 bars. Makes 36 bars (and I could eat every one ;-) )

Enjoy -

Yes Venus, they sang "Let Me Call You Sweetheart", and "I Love You Truly". I used to sing with our local barbershop chorus but work commitments won out, i.e. not enough hours in a day.

Thank you, Venus.

Those sound like a winner. Potluck season at church is getting into high gear later this month, and I'm always looking for dishes that are portable.

I'll probably make the icing in the food processor..covered workbowl, prevents flying clouds of confectioner's/icing/10x sugar.

Venus: You are a very naughty girl for posting that Butterfinger bar recipe. I just finished trying them after frosting them, and now I have to go to confession and I'm not even Catholic. They're that "SINFUL", but very delicious especially with a cup of fresh coffee made in my Universal Coffeematic percolator.

Austin: You are a very lucky person to have a Mom that is such a great cook. My Mom is a super cook too, so I guess we are both very fortunate people.

YUMMY!

Hey Tim!

Thanks for the kind words! Glad you enjoyed the dessert. Are those bars not the greatest!! You can't make these too often! OY! I can see the inside of my arteries now! LOL

Frig: Did you get a chance to make them as well and send the office into total sugar shock?

Venus :-)
