Hooray for Cheese Souffle!

In anticipation of a trip to Paris in May, we have been Frenching things up. The other day, we whipped up a cheese souffle - I forgot how much I love these savory clouds of goodness.

I can't see the video at work but this sure sounds good for Friday meatless day for Lent.  This a good salad and fresh french bread.

KitchenAid Portable mixer

Kevin, it the KitchenAid portable mixer, your favorite portable mixer?

Russell - of the modern hand mixers out there, I think the KA is the best. I have a couple of them and both have performed beautifully over the 10+ years they have been in my kitchen. I find the beaters easy to attach/remove and very easy to clean. It makes quick work of beating egg whites, whipping cream, etc. It's fine for cake batter, but for any stiffer dough I use a stand mixer.
