We flipped the calendar to the New Year with a Pineapple "Princess" Upside Down cake. The "Princess" part of this cake comes from a Teresa Brewer song called "Pineapple Princess" that Ralph just had to play while we were baking.

I hope everyone has a Happy New Year filled with good health, great joy and much love!

Very Nice Kevin,

I'm so glad to see that you use a Pineapple Supreme cake mix too, since you do it too I dont find it cheating.

I do most everything the same as you except a few things, I use ring and whole maraschino cherries, and to me the biggest thing in making one of these is to use a 12" Griswold cast iron skillet. I also stir in 1 cup of crushed pineapple into the cake batter.

I make the recipe that I received from Michaelman2 using Lawrence's suggestion about using the drained juice in place of the water called for in the batter.  Click on the link.

2 x 9" rounds in the oven as I type.

I couldn't find DH pineapple supreme cake mix at our local store but found the last box on the shelf at Meijer Sat morning.. I'd already bought a can of pineapple bits a day before.. So here I am not 45 minutes ago.. assembling everything, had the butter melting in the oven and do you think I could find that can o pineapple bits.. NO.. I searched everywhere, so back to the store which is thankfully only about 2 blocks aways grrr. As I'm driving over there I think I remember what happened to it.. I'd been buying mom some groceries and it probably went into her bag..

Did Teresa Brewer record "Pineapple Princess"? To my knowledge, "Pineapple Princess was recorded and released by our beloved Mousketeer Annette Funicello as part of her "ette" series of LPs - "Italiannette", Danceannette and of course"Hawaiiannette".

Actually, it is a catchy little tune and after too many tropical cocktails, my friends and I will belt out the song as well... Since poor Annette is confined to a wheelchair and can't speak as a result of MS, let's give credit where it is due...

Hmmm....

ahhh, I make mine the same way using pineapple chunks and Duncan Hines white cake mix. I will look for pinapple supreme and add extra baking powder and soda. Looks so good. One coming up this weekend. Happy New Year everyone. Dano

Teresa Brewer did record "Pineapple Princess" on her album "Aloha from Teresa," which she recorded in the early sixties. I know that Annette Funnicello sang it also, but I don't have that recording, only the Teresa Brewer version. The song was written by the Sherman brothers.

Annette Funicello sings "Pineapple Princess" for you

As far as I know, she didn't sing the song in any of her beach films. The video below has her version/cover of it, superimposed over clips from her various beach party films. Her version was part of a Hawaiian-themed album called "Hawaiiannette". Her version of Hukilau is also on the album.
